El Siete, which was launched by Harts Group earlier this year, is Soho's latest agave bar, taking over a basement space under restaurant El Pastor.
The basement venue, which has a late-night bar feel, is a homage to the cult Mexico City nightclub El Colmillo.
Its name El Siete (The Seven) is a theme found throughout the concept, informing everything from the bar's identity to its drinks menu.

On its cocktail menu is a page of seven Margaritas, inlcuding the 777 Margarita, the bar's signature serve, with Tequila Herradura Plata, Siete Sec No.1, lime and lemon. It is poured ice cold from a stainless-steel flask in a salt rimmed glass.
The 7 Agaves section sees signatures and classics. The Paloma elevates Mexico's highball with grapefruit soju, grapefruit soda and a grapefruit and hibiscus foam.
The Classicos section sees seven other-cateogry serves, including an Espresso Martini combining vodka with Compañero Cocoa Nib, Kahlúa and concentrated coffee.
A collection of 60 agave spirits sits behind the bar, ranging from tequila and mezcal to rarer expressions including raicilla, capón and pechuga. El Pastor's exclusive Batch 005 mezcal, produced in partnership with fifth-generation mezcalero Don Guillermo Abad, is also available.

The food offering centres around "elevated drinking snacks", including chile de árbol popcorn and a range of mini tostadas made with El Pastor's house-nixtamalised heirloom corn tortillas. Toppings range from yellowfin tuna with chipotle mayo to avocado with pumpkin seeds and chile de árbol, alongside sweeter options such as caramelised banana with dulce de leche and Chantilly cream.
Each day from 5pm to 7pm, El Siete also offers Sips 'Til Siete, a rotating aperitivo-style menu created by bar manager Lili Johnston. The promotion features a short, long and frozen cocktail, all priced at £7, with new serves introduced weekly.
