Archive & Myth, the cocktail bar located within London’s Hippodrome Casino, has appointed Pedro Montero as its new bar manager.
Montero joined the venue in June 2026, following three-and-a-half years at Mayfair cocktail bar Kwānt, where he most recently held the position of head bartender.
His appointment brings 14 years of experience across the hospitality and cocktail industry to Archive & Myth, with a career that has taken him through leading cocktail venues across Europe, Asia and South America.
Born in Trinidad and Tobago and raised in Venezuela, Montero began his career as a bar back before moving into bartending. He has since developed a career spanning cocktail technique, menu development and luxury hospitality, while also taking on an entrepreneurial role as the founder and owner of Elevated, a speakeasy bar in Coron, Philippines.
Prior to joining Archive & Myth, Montero also worked as head bartender at The American Bar at The Stafford Hotel in London.
At Archive & Myth, Montero will oversee the bar’s day-to-day operations, team development and creative direction.
Montero has a particular interest in vintage spirits and cocktail history, alongside the production methods behind different categories of spirits. His approach combines an appreciation of traditional techniques with an interest in reinterpreting them in a contemporary setting.
