Aperitivo, bittersweet, dry


This cocktail is clean, dry and fruity with a light, lingering bitterness. The sweetness fades, replaced by the earthiness of the sherry. An excellent aperitivo cocktail that strikes a delicate balance between sweet, bitter and fruit.

Ingredients

30ml Bamboo shoot infused Cocchi Americano Bianco

30ml mead

10 ml Strawberry shrub

20ml Fino sherry

Dash of Saline

Garnish with green apple caviar

Method: Stir and strain, express and discard lemon peel
