Edinburgh’s Old Town has a striking new addition in Sköll & Hati. From the team behind The Cocktail Geeks, this latest opening explores Norse mythology through two distinct menus and settings, united by a single idea – following the chase of the sun and moon.
Inside, first impressions are warm, intimate and immediately inviting. From the bar, your eye is drawn to an impressive back bar with unique Scandinavian whiskies and mead, setting the tone for what’s ahead. Each day at 5pm the bar transforms as day turns to night.
Sköll becomes Hati and the menu shifts to 18 cocktails charting the story from the creation of the cosmos to Ragnarök. My evening begins with Bifröst – a vibrant, refreshing serve packed with flavour. Vodka, chuckleberry, falernum, mandarin and bergamot soda combine to create a drink worth returning for.
In the mood for something richer, I try Ginnungagap with gin, burnt honey, mint, citrus and Port of Leith tawny port. An unlikely combination on paper, it proves a delight in the glass. Sköll & Hati nails both concept and execution – a bold and thoughtful approach to flavour. I’ll certainly be back.
