After ten years at Nightjar, five of which were in leadership positions, Sebastiano Cristofanon is to leave the east London cocktail and music bar. 


Emanuele Pedrazzani will be moving into the bar director role left vacant by Cristofanon, with Vincenzo Brescia as bar manager, and Giuseppe Quartarato taking on the head bartender role.

Chantal Bozzi and Cintia Hunyadi will continue to head up the Front of House team. All have been at Nightjar for more than five years.

Rosie Stimpson, owner of Nightjar said: “We’re sad to be saying goodbye to Seba after ten years of working together. Like every one of our leaders, he started as a bar back and through his strength, tenacity and creativity rose to the top.

"Seba took the reins as bar manager at an extremely challenging time coming out of Covid, and has built and nurtured an enduringly brilliant team behind the bar. Seba was also the brains behind what we believe to be our best ever cocktail menu - the commemorative 15 year edition released in 2025. We wish Seba all the very best in his future endeavours, and there will always be a seat for him at the bar.”

Cristofanon added: "At Nightjar I had the privilege of growing alongside Edmund Weil and Roisin - directors who trusted me, gave me the freedom to develop ideas, allowed space to learn from mistakes, and supported me throughout this journey. And of course, an incredible bar team that grew through both difficulties and successes full of amazingly skilled people, something rare to find in our industry. Together we built and evolved an incredible beverage programme.

“But beyond the cocktails, the awards, and the late nights, Nightjar taught me something deeper. It taught me the meaning of teamwork, resilience, attention to detail, and the importance of creating experiences that guests remember long after they leave the bar. It shaped not only my professional path, but also who I am as a person.

“After ten amazing years, I’m looking forward to taking a little time for myself before beginning the next chapter. Thank you to everyone who was part of this journey."
