Mariotti will remain with the Ennismore group, taking up a role as assistant F&B director at Estelle Manor, and will continue to support Gleneagles' bars on menu development.
Mariotti said: "After six of the most formative, engaging, and exciting years of my career, tomorrow will be my last day here at the Glen. Over the course of my tenure here, we embarked on a mission to deliver the most comprehensive Food and Beverage experience in the world. What I did not expect, was the incredible people I met along the way.
"Gleneagles is a special place, one that cannot be brought to life with words. I am grateful for the trust and opportunities I was given to leave my small mark on such an institution. But more importantly, I am grateful for the commitment and energy that Andrea [Gardiner] and Emilio [Giovanazzi] have delivered.Seeing you blossom into the leaders you have become is my proudest career achievement."
