Hawksmoor St. Pancras is set to open on November 22, promising a “grand” steak and seafood restaurant and Martini Bar.


The latest Hawksmoor - the eighth in the UK - is set in the neo-Gothic arches of the St. Pancras London Hotel, previously home to the Midland Grand Dining Room and Gothic Bar.

The Martini Bar (pictured) is billed as a tribute to Hawksmoor’s “long-standing love affair with the Martini,” with a list that runs through the gamut of styles — from the “Ultimate” house Martini serve to the “blushing” Pink Gibson and Duke’s-style Direct Martinis.

The bar also showcases new and classic cocktails, not least Hawksmoor’s “Sacred Six,” which includes Shaky Pete’s Ginger Brew and the Sour Cherry Negroni.

The group said of the new venue: "The Martini Bar is a new kind of Hawksmoor bar — high-energy, high-quality and designed for every kind of moment.

"Inside the gloriously decorative, high-ceilinged room, complete with an outdoor terrace and DJ stage, we’re creating what we hope will be the finest place in London to drink Martinis and other timeless classics."

Co-founder Huw Gott and executive chef Matt Brown have also devised a bar food menu to pair with the cocktails, with the Martini’s accompaniment being a hot Scotch olive (think Scotch egg, but as an olive stuffed with molten Stichelton) served with a dill-pickle Gilda.

The bar food menu also includes beef-dripping hash browns with malt vinegar mayo, Exmoor caviar, and crème fraîche. 

Hawksmoor St. Pancras will be open Monday to Wednesday from 12pm-11pm, Thursday from 12pm-12:00am, Friday and Saturday from 12pm-1am and Sunday from 11:30am-11pm.
