If you’re in Edinburgh and haven’t hit up The Finch yet, where have you been? This is the new hotspot in Leith, and for good reason.

The menu is headed up with reimagined classics and an impressive selection of vintage spirits from the ’70s and ’80s. People (I mean bartenders) are losing their minds for the 1992 Fernet Branca.

Before diving into the drinks, let’s talk ambience. The light streaming through the stained glass while sitting in the coveted window spot, sipping a tart Scottish twist on an Amaretto Sour – perfection. I then opted for its take on a Daisy, the Heavy Spiral Mangue – the cocktail that inspired so many classics with Broker's gin, Briottet Mango liqueur and lemon.

The balance of sour and tropical was spot on. My friend had the Spicy Marg and in the two sips I had the fiery kick was nothing short of impressive. The steal of the show? Tropicality with Takamaka Coconut and Pineapple rums, lime and Schweppes Tropical Soda. It’s everything you want on a sunny evening in Leith.

The Finch’s charm is enhanced by its beautifully restored historic features, stained glass, impressive old gantry, elegant wooden columns, retro art and a beautiful, curved bar counter.

A homely spot is created and there is something for everyone on the menu. It already feels like a hub for the industry – here’s hoping it stays popular.
