
Founders of London restaurant Brother Marcus have teamed up with Angelos Bafas to launch a new East Mediterranean-inspired cocktail bar in the former site of The Blind Pig.
Kamara is the debut bar from Tasos Gaitanos and Alex Large, who launched Brothers Marcus in 2016.
Cocktails will draw on the Greek Heritage of Gaitanos and Bafas, with a focus on in-house macerated spirits and homemade ferments alongside wild-foraged British produce, all served in custom Cretan pottery.
Cocktail flavours will span the region, with released drinks including the Tuvunu Highball with fig brandy, Metaxa 12 Star, Greek mountain tea, fermented figs in honey, fresh lemon and fig leaf soda; Smoked Pepper Daisy with mezcal, single variety tsipouro, smoked boukovo, hay smoked tomato spirit, crushed black pepper, and basil leaf oil; the Mahleb, a gimlet made with Axia mastiha and Tsipouro, macerated with Essex grown cardamom leaf.
The bar will also offer a wine list centred around Greek, Georgian and Lebanese producers and a bar food menu with mezze dishes.
Kamara will open on Soho’s Poland Street this Autumn.
