The Sun Tavern's Andy Kerr will team up with Tom Gibson from Ruby's to open Parasol in Dalston in spring 2025.
Taking over the site of the subterranean Dalston nightclub The Nest on Stoke Newington Road, Parasol is expected to offer drinks in the vein of Kerr's The Umbrella Project - whose venues also include Discount Suit Company - including riffs on classics and seasonal signatures, which are already under development at The Umbrella Workshop.
There will also be an extensive wine list and bar snack menu courtesy of Provisions Wine & Cheese.
Parasol will open Wednesday to Saturday, from 5pm-2am, and will see a roster of DJs playing “esoteric selections based around heady 1980s NYC-style mutant disco”.
Kerr and Gibson said: "Since first meeting in Stoke Newington 12 years ago and working together on the Ruby’s cocktail concept, we’ve had the dream of working together on our own project, in our own neighbourhood.
“Now feels like the perfect time for us to launch Parasol, with Dalston’s nightlife and culture seeing a great resurgence, which we’re both tremendously excited about."
