Tropical, sweet and herbaceous
Created by Alessandro Todini of Three Sheets, Tierra was selected as this year's winner of Hacha's tequila cocktail competition. Showcasing a sweet version of one of Mexico's signature dish, mole, his cocktail is a tropical cocktail with notes of papaya and sweet peach liquer perfectly balanced by the herbaceous notes of Volcano Tequila.

Ingredients
10ml Papaya mole cordial
10ml Peach liqueur (Merlet)
50ml Volcano tequila blanco
10ml Peach liqueur (Merlet)
50ml Volcano tequila blanco
Method
Stir down in a mixing glass.
Serve over a clear ice block in a rocks glass.
Garnish with candied papaya.
