Scarfes Bar at Rosewood London has shifted its emphasis from playful signatures to a more classical approach in its latest menu: From Scratch.


Launching on 8th April, the 22-cocktail menu sees the Martin Siska-led bar return to “the fundamental principles” of cocktails, exploring “the essential DNA of the classics”.

From Scratch is the work of the Scarfes' bar team and was led by Siska and the recently departed Yann Bouvignies, who is now director of bars at Rosewood Amsterdam.

Among the cocktails, the Tropicaldi is a a tropical spin on the Garibaldi with Campari, fluffy orange, blended pineapple and strawberries producing a pink drink garnished with strawberry leather.

The White Lady, originally created in 1919 in Ciro’s Club in London, was the inspiration for Spring Lady, a floral twist using No.3 gin, St-Germain, long pepper and acacia hydrosol and Muyu Jasmin Verte.

Ramos & Eve, Scarfes’ take on the Ramos Gin Fizz, meanwhile sees Espolon Blanco, pandan, acorn, coconut cream, pineapple soda and garnished with a sprinkle of matcha powder.

Garden Smash, which has a sense of the Gin Basil Smash, is made with Hendrick’s gin, basil, elderflower and peach.

New York’s 2008 classic Paper Plane is the blueprint for Scarfe’s Paper Glider, a blend of Highland Park 12, Aperol, and peach and maple Verjus.

Scarfes Bar at Rosewood London in Holborn near Covent Garden, is named after the British artist and caricaturist Gerald Scarfe, whose artwork adorns the walls of the bar. It is a finalist in the Hotel Bar of the Year category at the Class Bar Awards 2024.
