During the creation of the Unity menu concept, Gaston Fusco wanted to develop a ‘Mexican’ drink where he could incorporate the freshness of the famous ‘Aguas Frescas’ with different ingredients from the Americas.

30ml Rum Copalli Blanco
22.5ml Nixta licor de Elote
6ml Cucumber juice
15ml Agave nectar
5ml Egg white
60ml Limonada Especial (Aguas Frescas-inspired homemade lemonade)
Garnish with Fennel flower & pipette with Ancho Reyes Verde
Method: shake over ice and served
