This Japanese riff on a Boulevardier uses matcha syrup to add a creamy sweetness to the bitter end of the palate, and is lifted by a touch of grapefruit liqueur.

40ml Nikka Days Whisky

15ml Luxardo Bitter Bianco

10ml Tio Pepe fino sherry

5ml pink grapefruit liqueur

5ml matcha syrup

1 drop 20% saline

1 drop coconut-washed absinthe
