Chris Tanner, Simo of Milroy’s and Liam Broom, former bar manager at Callooh Callay, have announced the opening of a new cocktail bar at Pan Pacific hotel in London.


Silverleaf is inspired by ‘naturalism and the elements’ with a drinks menu that has been created in collaboration with product and interior design company, Tom Dixon.

“When the opportunity arose to open a cocktail bar in partnership with Pan Pacific London, we leapt at the chance, as it has allowed us a new channel for creativity,” said Tanner.

“We’ve taken the elements that we know work - curation, hospitality, and training - and applied them to a diverse cocktail offering, opening up the possibilities of what we’re able to do away from whisky.”

Each cocktail will champion two or three core ingredients, aiming to highlight products that are recognisable to guests yet presented in new and unimagined ways.

The drinks list will include Heartleaf Martini, made with Haku vodka, seaside distillate, heartleaf, and dry vermouth, Grape + Spruce, with Suntory Toki, grape skin, birch and spruce, and Watermelon + Umami, made with Tanqueray 10, watermelon, umami vermouth, and sake.

Silverleaf is located in the 144-year old Devonshire House, a separate building adjacent to the hotel with views over Bishopsgate Plaza.

 “Our vision was for a destination bar that would showcase warm hospitality with creativity and would bring something different to this wonderful part of the city, enjoyed by locals and hotel guests alike,” said Anne Golden, general manager at Pan Pacific London.

“When we met Simo and Chris, we knew we’d found the right people with a passion to bring a unique cocktail offering to our already diverse food and beverage portfolio.”
